Adding walls to 22' pontoon boat

Hoping someone can offer some solid advice on a project I am considering.  I have a pontoon with 23" diameter logs x 22' long.  I want to do something similar to a mini party cruiser, so I have a small cabin area for when I am doing extended stays on the boat.  I am thinking to build it using the foam board and FRP, with aluminum frame, as I have been reading about on here when replacing walls.  Making the cabin area about 8'-10' long, and having it forward enough to have around a 5' rear deck in hopes of keeping it more balanced.  The roof will not be a deck so it wont have to hold weight of people, maybe put 1 or 2 solar panels on it.  Not planning on anything heavy inside, just a cooler, porta potty, small counter with sink and a very light futon for sleeping.  It will just be 2 people on the boat most of the time, and once in a while 3 total.  None of the original pontoon furniture will be on the boat.  Boat will be used in the keys, on the gulf side in shallow water for week long stays at a time, and possibly at an anchorage in the intracoastal once in a while.  We have previously lived about a 29' sailboat, so space, equipment and not bringing a bunch of stuff along, we understand.

So, the question is, would this work?  I could also possibly add a third toon. I should be under the safe weight capacity, if I added correctly.
